Vegetarian Stuffed Peppers

These were delicious. The come from, 366.

1 c quinoa, cooked
1 c brown rice, cooked
2 T olive oil
2-3 t cummin
1/2 c chopped onion
1 lg zucchini, cut into small cubes
2 tomatoes, diced
1 c sliced mushrooms
1/2 lemon, juiced (I just used lemon juice)
3 T chopped cilantro
Salt and Pepper
Parmesan Cheese
3 large bell peppers, halved and seeded

Cook quinoa and rice according to package directions. Heat oven to 400 degrees F. Heat oil in large skillet. Add cumin and onion. Fry until onion is soft. Add zucchini, tomatoes, and mushrooms. Stir well. Add lemon juice, cilantro, salt, and pepper. Turn down heat and let simmer for apx 10-15 mins. When the vegetables are soft, add 1/2 cup parmesan cheese, quinoa, and rice. Scoop mixture into halved peppers and place on shallow baking dish. Sprinkle with more cheese and cover with aluminum foil. Bake for aproximately 30 mins.
