This Zucchini bread is actually better cool than right out of the oven. It becomes more dense and moist. Around our house it is called Chocolate Bread. I got the recipe from Carmen, who ran the Carmel Reception Center on Highland for years. She has just retired at the age of 97.
3 eggs
2t vanilla
2 c white sugar
1 c oil
2 c grated unpeeled zucchini
3 c flour
3 t cinnamon
1 t salt
1 t soda
1/4 t baking powder
Beat eggs and vanilla really well. Add sugar and continue to mix well. Add oil and then zucchini, followed by everything else. Grease bread pans. Pour in 1/2 zucchini mixture into pans, top with chocolate chips, then pour in rest and add more chocolate chips. Bake 1 hour at 350. You can double the recipe, but it may fill up your bowl!

We call it chocolate bread because it actually has chocolate in it - same recipe except I add a 1/4 cocoa and 6 ounces of chocolate chips. Gets inhaled here.
