Watermelon and Jicama Salad

4 cups cubed seedless watermelon
1 jicama
1/2 cup fresh orange juice
1/4 cup fresh lime juice
Zest from both citrus fruits
2 tbsp honey
Salt and pepper to taste

Cube watermelon and jicama. Combine the rest of the ingredients in a bowl, pour over the cubed fruit and mix well. Enjoy!

Feel free to substitute at least some of the juice with bottled or concentrate.
