Cucumbers n' Cream

One of those standard "what-to-to-with-all-those-cucumbers-from-the-garden" recipes. Light and refreshing it makes a great summer side dish.

3 Medium Cucumbers peeled & sliced in rounds
1 Medium Onion-finely chopped
2 C. Water
1/2 t. salt
3/4 C. Whipping Cream
1/4 C. sugar
1/4 C. vinegar
chopped, fresh parsely (optional)

Combine cucumbers, onion & salt in water and let sit for 1 hour; drain.
Mix all the other ingredients and toss with the drained cucumbers & onion. Sprinkle with parsely if desired.
